How was your Christmas Eve dinner and Christmas lunch? Too many excesses? This week we propose a light, tasty and different starter for the coming celebrations: salmon and mango tartar with vanilla.

First, we chop the smoked salmon, preferably with a knife. We make slices that we will cut into strips of approximately 1 cm. If we have Thermomix and we are skilful with it, we can chop it with turbos, but be careful! we want a tartar, not a pâté. Once chopped, reserve in a bowl.

I had been wanting to prepare a cold dish in which salmon and mango were the star ingredients for a long time, so with these premises I had no trouble looking through the Torres’ culinary preparations and found a Salmon and Mango Tartar.

The presentation and sophistication, if we feel like it, is up to us. At home I plated it with a cooking ring and decorated it with chopped chives, I love the soft onion flavor it adds, and some poppy seeds, which were the crunchy, crunchy contribution, as they say nowadays.
